Cool Cucumber Soup

Here’s a recipe sent in from Betty all the way from Bolivia.   Betty owns the farm I’m farming and is a great cook.  So if she says it’s good it’s got to be good!

Cool Cucumber Soup
1 bunch green onions cut up
2-3 cucumbers cubed
6 cooked eggs cubed
1 c. raisins
3 c. yoghurt
1 c. milk/cream
salt and pepper to taste
1 and a half ice water
some ice cubes
Mix.  Real good on a hot summer day (or winter day when you´re in Brazil.)

A cracker or bread spread (or you can serve it hot on rice)
4 med. onions sliced
4 eggplants (about half the peel off) and cut like french fries
2 Huge red peppers sliced or the equivalent thereof
Spread them out in a good sized pan and bake till nice and soft…about med. heat for 1 to 1 and a half hours.

Refrigerator pickles

This is another simple recipe.  If you want to keep it simple, you can use just the vinegar and water and omit other ingredients

Ingredients:  cucumbers, 2 large onions

Brine: 2 cups vinegar, 2 T pickling salt, 1/2 tsp celery seed, 4 cups sugar, 1 tsp tumeric, 1 tsp mustard seed, 1 tsp pickling spice

Fill ice cream pail with cucumbers and onions, add brine and store in the fridge
